Organic Honey

Beekeeper Paraskevas Sotiralis sells honey produced by his bees that forage the mountainside above Neapolis. In the spring, he harvests wildflower honey. In the fall, he harvests the highly-sought-after thyme honey: deep gold in color and distinctively flavored. Each Thursday, he sells jars and tins of his honey at the laiki (farmers’ market). For those in the know, he also sells jars of gyri, bee pollen, harvested from the legs of the bees as they enter the hive.
